Brew Guide

How to Ascend

Ascend is built for any method. but it peaks with the right ratio and grind. Pick your weapon.

1.Use 1g of coffee per 15g water. For a 12-cup drip maker, that's ~60g of coffee.
2.Set water temperature to 200–205°F. Just off boil. Never at a rolling boil.
3.Use a clean filter. Rinse paper filters first to remove paper taste before brewing.
4.Drink within 20 minutes of brewing for peak chocolate and citrus clarity.

1.Bloom first: pour 2× the weight of coffee in water, wait 30–45 seconds. Watch the crust rise. that's fresh coffee off-gassing CO₂.
2.Pour in slow, concentric circles, working outward from center. Avoid the edges.
3.Total pour time: 3–4 minutes. Faster = under-extracted, sour. Slower = over-extracted, bitter.
4.Pour over is where Ascend's jasmine and citrus notes shine brightest. This is the move.

1.Add coarse ground coffee. Think sea salt texture. Too fine and the plunger sticks, the cup is muddy.
2.Pour all your water at once. Stir gently, break the crust, place the lid on with plunger pulled up.
3.Steep exactly 4 minutes. Set a timer. Press slow. 20–30 seconds. Slow pressure = less bitterness.
4.French press unlocks Ascend's full body and tobacco-molasses depth. The Sumatran lots dominate here.

2.Target a 25–30 second pull for a 36–40g yield. If it pulls fast, grind finer. If it stalls, coarser.
3.Ascend pulls a deep chocolate crema with a hint of citrus in the finish. No sourness, no chalk.

2.Stir, cover, refrigerate 18–24 hours. The longer steep brings out more of the Sumatran earthy depth.
3.Strain through a paper filter or cheesecloth. This is your concentrate. dilute 1:1 with water or milk before serving.
4.Cold brew makes Ascend taste like liquid chocolate with a brown sugar sweetness. no bitterness, naturally smooth.

Is this actually organic?

USDA Certified Organic, verified by Americert International. Every lot we source goes through third-party certification. No pesticides, no synthetic fertilizers, no BS. If it doesn't pass, it doesn't go in the bag.

How fresh is it when it arrives?

Here's the actual workflow: small batches roasted at our USDA Organic-certified partner facility, then sealed in oxygen-barrier bulk bags straight off the drum. Those bulk bags ship to our packhouse and stay sealed until orders come in. The day your order ships, we open the bulk seal, weigh, grind (if you chose ground), hand-fill into a foil-lined pouch with a one-way degassing valve, and seal it closed. Your bag was filled the day it shipped, never pre-bagged, never sitting on a shelf. You'll notice the bloom when you brew. Fresh coffee blooms. Stale coffee doesn't.

Whole bean vs. pre-ground. which should I get?

Whole bean if you have a grinder. grinding fresh always wins, especially for pour over. But if you don't have a grinder, our pre-ground option is still a major upgrade over what you'll find on a shelf. Most "fresh ground" coffee at the grocery store was ground weeks ago. Ours is ground the day your order ships. medium grind, ideal for drip and pour over. If you're doing espresso or French press, get whole bean and a burr grinder so you can dial it in.

How does the subscription work?

You pick your delivery frequency. every 2 or 4 weeks. You save 15% on every order. Free shipping always. Can I use it for espresso?

Yes. Ascend pulls excellent espresso. Target 18–20g in, 36–40g out, 25–30 seconds. The Full City Plus roast handles pressure well, and you'll get a deep chocolate crema with citrus in the finish. Get the whole bean version for espresso so you can dial your grind.
