Brew Guide

Built for Pressure

Eclipse is roasted Full City Plus and tuned for pressure brewing. Three methods only. espresso, moka pot, French press for heavy body. No drip, no pour-over, no cold brew. If you want those, look at Ascend.

Method 1. Espresso

1.Dose 18g into the portafilter. Distribute evenly. Tamp with ~30 lbs of pressure. level, no rocking.
2.Lock in. Pull. Watch the crema bloom from chestnut into a thick, settled layer. Eclipse pours cocoa-dark crema. not yellow, not blonde.
3.Target 25–30 seconds for 36g out. Faster = grind finer. Slower = grind coarser. Adjust until pull time hits the window.
4.Pull, breathe, sip. Don't rush the crema. The whiskey note shows up in the finish. give it room.

1.Fill the base with hot water to just below the safety valve. Hot water in means less time on the heat. less risk of scorching the grounds.
2.Pack medium-fine grinds into the basket. level, no tamp. Tamping a moka chokes the flow.
3.Assemble. Place on low heat. Patience over pressure. Lid open so you can watch the pour.
4.Listen for the hiss. The second it goes from gurgle to whistle, pull it off the heat. Run cold water over the base to stop extraction.

Method 3. French Press

Steep
1.30g coarse-ground coffee, 450g water just off boil. Pour, stir, cap with the lid (plunger up). Bloom 30 seconds.
2.Top off to full. Steep 4 minutes total. Set a timer.
3.Plunge slowly. 20–30 seconds. Slow pressure means less silt, less bitterness, heavier body.
4.Decant immediately into a separate vessel to stop extraction. Coffee left in contact with grounds keeps brewing, and turns bitter.

The FAQ

Is Eclipse a single-origin or a blend?

A two-origin blend. India Robusta from the Western Ghats and Sumatran Arabica from the Gayo Highlands. Both volcanic-soil, both shade-grown. We chose two origins instead of three to keep the cup focused for espresso pressure.

Can I brew Eclipse as drip or pour-over?

You can, but you'd be missing the point. Eclipse is roasted Full City Plus and built for pressure brewing. espresso, moka pot, French press for heavy body. If you want a drip-friendly daily, look at Ascend.

What's the caffeine level?

High. The Robusta component delivers roughly 2x the caffeine of pure Arabica blends. One double shot will move you.

How does Eclipse compare to Ascend?

Same volcanic-soil DNA. both pull from India and Indonesia. Ascend adds Colombian brightness and roasts to a balanced medium for hot drip. Eclipse drops the Colombia, roasts darker, and tunes the blend for espresso. Ascend is the morning cup. Eclipse is the after-dark pour.

How fresh is the coffee when it arrives?

Roasted in small batches at our partner roaster in Florida. sealed in oxygen-barrier pouches with a degassing valve immediately after roast. You'll get it close to the roast date.
